Ziti with Quick Italian Sauce2015-07-12

1 pound ziti pasta
1⁄2 cup chopped basil
Salt and pepper to taste
1⁄2 cup freshly grated parmesan cheese
For The Marinara sauce
3 tablespoons extra-virgin olive oil
1 onion, chopped
8-10 cloves of garlic, chopped
1 cup dry red wine
3 tablespoons chopped fresh thyme
1⁄2 medium carrot, finely shredded
1 kg tomatoes
Kosher salt and pepper to taste
Cook ziti pasta into boiling water according to the package directions. After ziti pasta cook strain with a rice strainer.
Heat the olive oil on medium flame then add the onion and garlic, cook until soft, and light brown, around 3 to 5 minutes. Add the thyme, carrot, salt and pepper. Sauté until all the vegetables are soft, about 5-8 minutes. Add red wine and Cook 5-8 minutes then add the blanched tomatoes, simmer the flame and cook until the sauce thickens, about 25-30 minutes.
